This vibrant and refreshing Melon Agua Fresca is a breeze to whip up and the perfect way to celebrate the juicy sweetness of locally grown rockmelons at their peak. So, grab a ripe melon (the heavier, the better!) and get ready to blend up a taste of sunshine! ☀️ You can make this beverage with or without alcohol but, naughty or nice, this drink is such a winner!

MAKES 4-6

COOK TIME - nil
INGREDIENTS
2 cups rockmelon, roughly chopped
2 cups water
1-2 medium lime, juiced (make to your own taste)
2 tsp raw sugar (optional to leave out if your fruit is ripe and sweet)
Garnish with slices of rockmelon, cucumber and mint
120 mls tequila (optional)
4-6 sliced of rockmelon (for garnish)
4-6 slices of cucumber (for garnish)
METHOD
In your blender combine rockmelon, water, lime juice, tequila and sweetener (if using).
Blend on high until smooth.
Taste for lime and sweetness and adjust and blend again if necessary.
Pour into your garnished glass over ice.
COOKS NOTES
+ Rockmelon also makes a fabulous smoothie when blended with vanilla ice cream and milk…just saying.

Storage - Rockmelons should be stored in a cool, dry place, such as a refrigerator. They can be stored for up to 5 days in the refrigerator.
