Mothers Day Pumpkin Waffle with Roast Pears
Mother’s Day is for breakfast in bed!
It was such a pleasure to jump into my new kitchen with old mate Kristen Pavez and throw around ideas for a whole food, gluten free, dairy free Mothers Day feast fit for a queen. With a little help from Honest Goods Co Bread and CoCo me coconut yoghurt we layered and baked our way to the gorgeous breakfast graze you find below. We loaded toast with fresh ingredients and added fruit to our tray as well as bowls of pumpkin waffles topped with honey roasted pears, peanut butter and macadamia granola, vanilla yoghurt and caramel sauce. Needless to say I’m sharing this post with my own three delightful children in the vain hope they muster the energy to whip me up breakfast in bed. If you don’t have hope you got nothing!
No dish on the platter is hard to create. You just need to pop in some extra effort with the final display.

Roast Pumpkin Waffles with Roast Pears
Roast Pumpkin Waffles
Gluten Free / Dairy Free
Serves 3-6
Ingredients
DRY
2 cup almond flour
1 cup buckwheat flour (or tapioca flour for a crispier texture)
1 tbsp baking powder
¾ tsp salt
2 tsp cinnamon
2 tsp allspice
WET
3 eggs
2/3 cup oat milk
½ cup coconut oil (or butter)
1 cup roast pumpkin puree *see note
3 tbsp maple syrup
1 tsp vanilla essence
Method
Whisk together dry ingredients in a bowl.
Whisk together wet ingredients in a second bowl.
Fold the wet mix into the dry mix.
Heat your waffle maker and put ¼ of the mix in for each waffle.
Cook for about 5 minutes or until the waffle is cooked through.
Repeat until all waffles are cooked.
Top your warm waffles with roast pears, coconut yoghurt and extra sauce from the pears.
*Note - Roast chunks of pumpkin drizzled with olive oil at 200°C FF for around 25 minutes until soft and caramelized. Mash skin on.
Roast Pears
Serves 3-6
Ingredients
3 Bosc pears, sliced in half and cored.
3 tbsp honey
1 tsp cinnamon, ground
¼ tsp nutmeg, ground
3 bruised cardamom pods (optional)
2 tbsp coconut oil (or butter)
½ cup water
Method
Preheat oven to 200°C FF
Lay pears out on a baking tray
Drizzle evenly with honey and coconut oil
Sprinkle evenly with spices
Pour water into the pan around the pears.
Roast for 20 minutes or until cooked to your liking.
Serve your roast pears with waffles, ice cream, yoghurt, porridge or rice pudding.. the world is your oyster.
CREATING THE PERFECT PLATTER
Making sure your delivering a striking display of food is really not that hard. here are my tips for pulling together something special for Mum.
Be generous and make sure the platter looks full
Keep it simple. Keep the tray, bowls and and cutlery neutral and let the food do the talking.
Surprise.. pop on something special on the tray. Add flowers, a little note or heart chocolate.
Choose one item to be warm and the rest cold so you can manage the timing and they can enjoy the warm item first before snacking on the cold ones.
Beautiful ingredients make a perfect natural, colourful display. Buy great inclusions and do less garnishing.
