Olive Oil
1 large onion diced
2 garlic cloves, minced
500g beef mince
spice blend (see below)
1 carrot, diced
1 zucchini, diced
1 bunch coriander, stems and root finely chopped, leaves reserved to finish
1 tin tomatoes, crushed
1 tin black beans, drained and rinsed (or kidney beans)
1 tin lentils, drained and rinsed
Spice Blend
1 tsp chilli powder, or more to taste
1 tsp garlic powder
1 tsp onion powder
1⁄2 tsp crushed red pepper flakes
1⁄2 tsp dried oregano
2 tsp paprika
1 ½ tsp cumin, ground
1⁄2 tsp sea salt
1⁄2 tsp black pepper
1 pinch ground cinnamon, or more to taste
1 pinch ground cloves
Tomato and coriander salsa
2 x large ripe tomatoes, diced
1/2 cup coriander chopped
½ red onion, finely diced
1 x garlic clove, crushed
Juice of half a lime
Salt to taste
To Serve
Reserved coriander leaves
Brown rice, cooked
Lime wedges
Avocado
Lettuce
Sour cream or yoghurt

To Prepare
Place a large pan over medium high heat, drizzle in some olive oil and cook onion and garlic until soft (8 - 10 minutes)
Add mince to the pan and cook until browned. Mix through spice blend until beef is coated in spice.
Stir through vegetables, tin tomatoes, lentils and black beans. Simmer for 20 minutes or until sauce thickens and carrots are tender. Add a splash of water or stock if the dish is drying out.
Meanwhile make tomato and coriander salsa by tossing together all ingredients in a bowl.
To finish, serve Mexican beef with brown rice topped with fresh coriander leaves, alongside lime wedges, avocado, lettuce, sour cream and corn chips for people to help themselves.
COOKS NOTESThis meal is a great one to prepare ahead, as the flavours deepen with time.
